Tasting Notes: Using Sangiovese, the principle red varietal of central Italia, Valle di Assisi<br />distinguishes themselves with this slight variation of an Umbrian classic.<br />Blended with Merlot, this wine achieves more body and softens the tannins of the Umbrian clone, but maintains terrific freshness and acidity. With aromas of violets, cranberry, acacia wood and rhubarb, this wine improves literally any meal it accompanies.

15% Merlot.
Barrel No barrel aging.
Residual Sugar 0.29 grams per liter. Maturation 2 months in the bottle.
Acidity 5.5 grams per liter. Vintage Production 1,250 cases.
Alcohol 13.5% by volume. Foot Fairing Porcini mushroom risotto, pork loin with fresh herbs, and Pecorino cheese.
